My best (to date) bottled cocktails

I fucked up big time. This isn‘t mixology anymore, it‘s R‘n‘D. It‘s chemistry - science, bitch! It all started as an idea to make cocktails I love as a to go version. I ordered PET cans and a seamer to produce my own cocktails 2go. But I wanted more: I wanted shelf life, I wanted stability. So I swapped incredients. First the fruit juice had to go, no more real lime - citric acid. I added natural flavors of lime to compensate. The weird thing about it?? IT WORKED! I was hooked. Made some variations, designed shelf stable batched cocktails like the big players, but with the good shit. So I finally got to this: 40 ml rum blanco, 20 ml rum reposado, 12 ml overproof rum, 12 ml triples sec, 12 ml orgeat, 8 ml simples syrup, 6 ml dissolved citric acid, 90 ml water, a few drops of lime flavor — that‘s my homemade Mai Tai Buzzball with 18.1% ABV. It‘s smooth, it tastes original, it is the perfect size for a quick and dirty cocktail on the run. And it elevates my drinking habit only on a small scale, at least that‘s what I tell my wife. What do you guys think?

I bought this seamer: https://www.zonesun.com/products/zonesun-zs-fjg100-manual-can-seamer-bottle-sealing-machine And got the cans from petcan-europe.com - they come in a 200pack but they have various sizes wich come in a 100pack, too. Right now I'm designing Rub On Stickers for on the can as you can't really label them because they are so round.

I did indeed but not with this little ones, as they have only 200ml I like them to have higher ABV. But I also have 500ml-cans with wich I tried a cuba libre and a moscow mule so far. The big fun with them is, that I also have another kind of lid. It‘s a little thinner, looks almost like aluminium foil, has a latch for opening completely but hold drinks with carbonisation as well without leakage. What‘s the fun part? I don‘t open them, I take a glass straw and ram it through the lid into the drink. Almost like you would with a bubble tea with sealed plastic lids, if you know them. It takes a little strenght but there is almost no spillage as one may think it would be. I should post a video of that sometime, haha.

Three months ago, when you posted your Negroni buzzball, you said you got your samples from a trade fair. Do you now have an actual source, or are you still using those samples?

You’re right. I wanted to give an update. I was in contact with a wholesaler in belgium and after a long and annoying time mailing each other they finally was able to send me a pack of 200 cans (minimum order for the 200ml-balls), alongside with 100 pieces of a bigger can for other stuff. All costs combined this first stock cost me around 220€ but its good quality. Every can is single packed in plastic so nothing comes in it before filling them. I do, but still figuring out some details like sourness. For example 6 ml or 8 ml can make a big difference as it is super concentrated. The same with the flavors I only can measure in drops, wich isn‘t pretty scalable

My club has a canning machine that can fit 16oz. Was the orgeat homemade or store bought? That might affect shelf stability. We are in the process of making our own "not water" margaritas that come out crystal clear through various acids that mimic lime juice. In addition to your citric acid, think of using malic and ascorbic acid. Lime has many other minor acids, but those three will get you further than citric acid alone. Again, curious on how you achieved shelf stable orgeat if it wasn't store bought.

That‘s interesting! I heard that you use different acids in super juice as well. Is there a ratio you was happy with when playing around with the different acids? I use store bought orgeat. Did it only one time myself but it got moldy in the bottle. But yeah, for these cans I only use store bought incredients so far, because I don‘t want to risk the shelf stability.

I got them from petcan-europe.com as I live in germany but I think they ship worldwide. Minimum order for the 200ml-balls is 200 pieces as they come in a pack of 200. Sounds much, but the day they came I already filled 25 of them out of curiosity.

When I‘m a millionaire there are NoMore_BadDays, makes sense! Dude, I really thought of turning it into a product for a while now. But alcoholic beverages is a pretty hard market and I would need to sacrifice quality by a big notch to get production costs low enough to make profit, so - at least for now - it‘s a hobby.

That’s fun! For the dissolved citric acid are you using a liquid citric acid or dissolving a set amount of powdered citric acid in water and then using that?

For right now only citric acid witch I disolve myself in water. I did 10% for the first batch, but I think I‘m going with 20% on the next one so I need less liquid in the final drink.

Powdered is readily available and easy to measure when using other acids like malic and ascorbic.

My go-to ratio for making fake lime with powders is 94g water, 4g citric acid powder, 2g malic acid powder

They are cocktails you can take with you backpacking, tailgating, or to someone's house. This is a much better alternative than bringing four bottles and mixing on the spot. I like to reuse small tonic water bottles, but saving a bunch of small bottles isn't for everyone.
